Horchata
Ingredients for 1 l horchata
- 250 g de tigernuts.
- 1 l water.
- 125 g sugar.
Preparation method:
- Put the tigernuts to soak first. We must have them in water for 24 or 48 hours and change the water several times to remove impurities from the fruits.
- Put the hydrated tigernuts in a bowl with a little water and start to grind them gradually with a mixer.
- Little by little the milk (or the horchata) comes out from the tigernuts. Then sift it to remove the impurities and squeeze a little more the chufas. A work is expensive and requires patience and great manual strength.
- Then add the sugar and the rest of the water to the bowl and mix vigorously. Put it in the fridge for a couple of hours to keep it fresh.
