Ingredients for 1 l horchata

  • 250 g de tigernuts.
  • 1 l water.
  • 125 g sugar.

 Preparation method:

  1. Put the tigernuts to soak first. We must have them in water for 24 or 48 hours and change the water several times to remove impurities from the fruits.
  2. Put the hydrated tigernuts in a bowl with a little water and start to grind them gradually with a mixer.
  3. Little by little the milk (or the horchata) comes out from the tigernuts. Then sift it to remove the impurities and squeeze a little more the chufas. A work is expensive and requires patience and great manual strength.
  4. Then add the sugar and the rest of the water to the bowl and mix vigorously. Put it in the fridge for a couple of hours to keep it fresh.
